Pear Clafouti

Mmmmmm ... I adore clafouti's. They are easy to whip up, and bake while eating dinner. And they are so, so good. This is a Pear Clafouti recipe from The Paris Cafe Cookbook.

PEAR CLAFOUTI

Serves 6
Preparation Time: 10 minutes
Cooking Time: 40 minutes

1 c. flour
1 T. vanilla extract
1/3 c. sugar
3 large eggs
1 c. milk
1/2 c. heavy cream
A pinch of salt
5 pears, peeled and cut into 1/4 inch slices (you can also use plums, berries, apples or the tradition black cherries)
Unsalted butter for greasing baking dish

1. Preheat over to 375 degrees F.
2. Put all ingredients except the pears and butter in a large bowl and beat well with a whisk.
3. Add the pears and mix well with a spoon.
4. Butter a baking dish about 9 inches round and at least 2 inches high and pour int he batter, being sure the pears are flattened down and well distributed.
5. Bake for 40 minutes, or until puffed and golden brown. Serve warm on individual plates.
